Apricot Protein Balls

Servings: 11-12                      

Ingredients: 

1 cup dried apricots

1/2 cup cashews

1 tablespoon honey

1 cup shredded coconut

1 -2 tablespoons of water

1 scoop Noway Vanilla protein powder.

 

 

 

Method: 

  1. Place the apricots, cashews, protein, honey and 1/4 cup of the shredded coconut and water in a food processor. Blend until the mixture comes together and is well combined.
  2. Roll tablespoons of the mixture into balls and into the remaining shredded coconut to coat.
  3. Refrigerate for 4 hours or until firm, store in fridge for up to 10 days, in an air tight container
