Chocolate Chunk Slice

As a child, Christmas for me was SPECTACULAR, I was always in charge in lacing the desserts with as much sugar as possible, but knowing what I know now there are many other ways to cater for celebration treats that don’t wreak havoc on your body! 

One of my favorite recipes to make as gifts was white Christmas, so I decided to make a healthier chocolate Christmas, which turned out amazing.  Containing organic dried cherries, cranberries and blueberries, if you lived in a 1km radius from my house this December then your received a plate full! One of the batches i made also had the addition of ginger, which gave it a bit of heat, but tasted just like Christmas, if Christmas had a taste.

Chocolate Chunk Slice

Ingredients:

  • 2 cups organic brown rice puffs
  • 1/2 cup organic dried cranberries, 1/2 cup organic dried blueberries, 1/2 cup organic dried cherries (you can use any dried fruits)
  • 1 cup organic, unsalted pistachios
  • 1 cup organic desiccated coconut 
  • 1 /2 cup noway choc caramel fudge protein powder 
  • 200g organic 70 – 85% dark chocolate
  • 200g organic, coconut oil

Directions:

1. Line a square slice tin with baking paper and set aside

2. Place brown rice puffs, cranberries, blueberries and cherries, pistachios and coconut flakes in a bowl

3. In the meantime melt the chocolate, coconut oil together over a low heat, once melted add the protein powder, combine than pour into the brown rice puff mixture and mix well to combine

4. Place the mixture into prepared tin and place it into the fridge for 2 hrs to firm up then slice

Store in fridge
