Protein balls of any sort are always a favorite in my house, they are something you can quickly grab and eat before a work out and are a great snack option for my boys. These ones are made with Noway Vanilla Caramel Protein, coconut and fresh tiny strawberries picked from my garden.

Serving – 10 balls
1.5 cups desiccated coconut
1/2 cup NOWAY Vanilla Caramel Protein Powder
1/4 cup melted coconut oil
2 tbsp sweetener – I used organic maple syrup
1/2 strawberries finely diced
1/2 cup 70 % organic chocolate
1 tablespoon coconut oil
1. Combine all the ingredients together.
2. Using a table spoon, scoop the mixture up and with you hands roll them into balls. The mixture needs to be really squeezed together, if your mixture is to dry add more coconut oil.
3. Put them on baking paper and into the fridge for 30 minutes to harden up.
4. About 5 minutes before the balls are ready melt the chocolate and coconut oil together, roll the balls in the melted chocolate and transfers onto the baking paper. Cover with more coconut and put them back in the fridge for another hour so the chocolate firms up.
Store in fridge for up to a week.
