Modbiotic Friendly Green Breakfast Bowl

1 x garlic clove, crushed
1 tsp Coconut oil
55g kale & baby spinach mix
1 x pre-cooked baby beetroot, sliced
35g carrot, ribboned
¼ avocado, sliced (optional)
1. Heat coconut oil in a frypan over medium heat, add garlic and broccolini, and saute for 3-5 minutes. Add kale and spinach and saute until wilted.
2. Half fill a small saucepan with water and bring to the boil. Crack egg individually into a small ramekin, tip each egg into the water. Cook for 3-4 minutes then turn off the heat. Lift the egg out with a slotted spoon and drain it on a paper towel.
3. Serve greens in a bowl with carrot ribbons, baby beetroots, and eggs on top. Add avocado and enjoy.
