Roasted Aubergine in Tomato and Basil

Servings 1/2 eggplant / medium

2 – 3 aubergines (eggplant) – (local produce)
1 tin fnally chopped tomatoes (mutti)
1 cup water
1/2 cup basil (fnally chopped) – (local produce)
Salt and pepper (my organics)
1/ 2 cup parmesan cheese (lamana direct)


1. Turn the oven on and Pre – heat to 180 degrees

2. Cut aubergines in half and sprinkle with salt, than sprinkle with favorite pasta sauce, and the water.

3. Top with the fresh basil , Parmesan cheese and than place in the oven, uncovered for about 1 hour or until very soft.

Serve immediately while it is hot, they taste even more amazing the next day.
