Chicken is by far a favorite in my house,and there really is so many combinations. In this recipe I use chicken thighs, it has a higher fat content which doesn’t dry out the chicken. Based in coconut oil, paprika, turmeric, garlic powder and lime – there are always left overs ready to hit the lunch boxes the next, eaten hot or cold!

4 chicken thighs
1 lime juice and zest
3 tsp smokey paprika
3 tsp garlic powder
1 tsp turmeric
1 tbsp coconut oil
1. Place the lime, smokey paprika, garlic powder, turmeric and only 1/2 tbsp of the coconut oil into a bowl, add the chicken and toss until covered in the spices

There are a few methods you can try according to your eating regime, but for this one i used a BBQ and grilled them on high heat for approx. 4 minutes each side.
Other methods of cooking can include steaming or frying in a pan which both obtain excellent results
