Ingredients
- 1 cup dried apricots
- 1/2 cup cashews
- 1 tablespoon honey
- 1 cup shredded coconut
- 1 -2 tablespoons of water
- 1 scoop Noway Vanilla protein powder.
Method
- Place the apricots, cashews, protein, honey and 1/4 cup of the shredded coconut and water in a food processor. Blend until the mixture comes together and is well combined.
- Roll tablespoons of the mixture into balls and into the remaining shredded coconut to coat.
- Refrigerate for 4 hours or until firm, store in fridge for up to 10 days, in an air tight container
