Ingredients:
1 cup cashews1 cup desiccated coconut + extra for rolling
2 scoops chocolate Noway
3 tbs cacao powder
2 tbs coconut oil
2 tbs rice malt syrup
Pinch of salt
1-2 tbs water
16 raspberries (fresh or frozen)
Method
- Combine cashews, coconut, Noway, cacao powder, coconut oil, rice malt syrup and salt in a food processor until it forms a coarse mixture.
- Add in water and blend until well combined and holding together.
- Spoon 1 tbs of the mixture, make a well and place 1 raspberry inside, fold the mixture over and roll into a ball and roll into extra coconut. Repeat with the remaining mixture.
- Set in the freezer for 1-2 hours. Store in an airtight container in the freezer.
