Collagen Berry Crumble Slice

Serves: 15 Prep: 5 mins Cook: 20 mins

Ingredients

Base:

1 cup almond meal
2 tbs coconut oil, melted
1 tbs maple syrup
1 scoop Vanilla Noway
2 tbs tapioca flour
1 egg

Filling:

180g Mixed berries
1 scoop Noway Juicy Wild Berry
4 tbs water
1 tbs chia seeds
Crumble
½ cup oats
½ cup shredded coconut
1 tbs flaked almonds
1 tbs coconut sugar
2 tbs coconut oil, melted

Method:

  1. Preheat the oven to 180C. Line/grease square baking tin.
  2. Combine all base ingredients together in a small mixing bowl until a smooth and sticky mixture has formed. Transfer batter to the baking tin, using wet hands spread the sticky mixture evenly into the tin. Pierce batter with a fork to aerate.
  3. Bake for 10 minutes. Remove from the oven.
  4. While base cooks make the filling. In a small saucepan over medium heat add berries and 2 tbs water, simmer for 5 minutes. Add chia seeds, Strawberry Noway, 2 tbs water and stir well. Simmer for a further 5 minutes and stir occasionally.
  5. Remove from heat and allow to cool slightly.
  6. Add berries to base.
  7. In a large mixing bowl combine all crumble ingredients well. Add on top of the berry layer and bake for 15 minutes or until golden.
  8. Allow to cool in the tin. Remove and slice into squares. Enjoy with ice-cream or yogurt for extra indulgence!
