Gingerbread Balls

Gingerbread Balls

Makes - 24

Ingredients:

½ cup cashews
1 cup almonds
2 tbs ginger powder
1 tsp cinnamon
1 tsp vanilla extract
¼ tsp ground nutmeg
2 tbs maple syrup
6 medjool dates
2 scoops vanilla noway
½ cup desiccated coconut + extra for rolling
2 tbs tahini
Pinch salt
1-2 tbs water

 

Method:

  1. Place all ingredients to a food processor and blend until roughly combined.
  2. Add water and blend until a sticky mixture has formed.
  3. Spoon out 1 tbs of mixture and roll into balls and dust in coconut. Repeat with remaining mixture.
  4. Store in an airtight container in the fridge.
