Super Protein Pancakes

Super Protein Pancakes

Prep: 5 mins Cook Time: 15 Mins Serves: 1

Ingredients:

2 eggs
3 tbsp preferred milk
2 tbsp quinoa flakes
1 tbsp quinoa flour
1 tbsp psyllium husk
½ tsp baking powder
½ tsp cinnamon
1 scoop Vanilla Noway (or preferred flavor)
½ tsp coconut oil (for frying)
Fruit, nuts, seeds or nut butter to decorate

Method:

  1. Whisk wet ingredients together. Add dry ingredients and combine well.
  2. Heat a frypan over medium heat, melt coconut oil in the pan.
  3. Spoon ¼ cup of mixture into the pan and allow to cook for 2-3 minutes on each side. Repeat with remaining mixture.
  4. Top with your choice of fruit, nuts, seeds, nut butter or yogurt. Drizzle with maple syrup.
