Banana Protein Biscuits

Banana can be used for so many different things, a yearlong seasonal staple in Australia, its sweetness is a perfect refined sugar replacement, I make these as "IM STARVING MUM" treats, a small dessert treat and most recently on a plate at my sons 10th birthday.

Ingredients

  • 3 (medium) bananas, mashed up 
  • 2 cups almond meal
  • 1/3 cup honey  
  • 1 teaspoon of cinnamon
  • 1/4 cup coconut sugar 
  • Optional addition - 1 scoop of NOWAY protein (vanilla) - place this in when combining all the other ingredients

Method

  1. Preheat oven to 180°C
  2. Combine the banana, almond meal, honey and 1 teaspoon on the cinnamon in a bowl and mix to combine
  3. Place the additional cinnamon and coconut sugar in a separate bowl and mix to combine. Roll tablespoons of the banana mixture into balls, fatten slightly and gently toss in the coconut mixture (if mixture appears to be to thin add more almond meal 1 tablespoon at a time)
  4. Place on baking trays that are lined with baking paper and bake for 30 - 40 minutes, or until golden brown, allow to cool on tray.
